If you are not stuck on using hand tools to make this bench top, you can get a hand held power planer that will make your fix faster. Shave the tongue down a little (1/64"-1/32" at a time) and then fix the sides of the groove until you have them fitting square. With slabs that big it will take a bit of help moving them because it shouldn't take too much cutting with the power planer. I have a Black and Decker hand planer, I don't use it much, but when I have a job like yours it really comes in handy. I hope this helps, and it should leave a lot of glue space along with whatever other joinery you are going to use.
